Rory O'Connell has been teaching people how to cook for more than 30 years, having co-founded the Ballymaloe Cookery School in Ireland with his sister, Darina Allen.
In this series, Rory introduces the timeless, classic, and essential techniques that every serious cook should master, such as roasting, pan-grilling, emulsion sauces, using gelatine, making perfect mashed potato and baking fish on the bone.
Each week, Rory demonstrates three recipes that combine to make a perfectly balanced meal, but which of course can be made and served on its own, or with other dishes.
The series will appeal to anyone who wants to improve their cooking skills, and increase their repertoire of dishes. Novice cooks will feel confident in the hands of a superb teacher. Experienced cooks will also learn from Rory's tips, techniques and colourful descriptions.
