Season 1

Jenny Bristow Light is an Irish cooking television series in which chef Jenny Bristow advises how to lose weight whilst maintaining a healthier and more energetic disposition by simply adjusting cooking methods and eating habits.

A book by the same title was released in conjunction with the show.

The series originally premiered in Ireland on UTV on 11 November, 2004. There are 12 half-hour episodes in the series.

Jenny Bristow Light originally aired in South Africa on DStv's BBC Food channel.

A rebroadcast of the series premiered on BBC Food on Monday 26 May 2008, at 20h30. Double episodes air back-to-back each week.

Synopsis

Jenny Bristow is one of Ireland's most celebrated television chefs and cooking writers. In this series, she offers a creative approach to cooking light, demonstrating ways we can all eat more healthily without sacrificing the enjoyment of food.

Jenny shares some of her favourite recipes for heart-smart dishes, reveals imaginative ideas for adding more fruits and vegetables to your diet, plans a vegetarian barbecue, and much more.

Chef Jenny Bristow shows how, with a few adjustments to our cooking methods and eating habits, we can lose weight, become healthier and more energetic - and stay that way.

With the thought that low-fat doesn't mean no fat, Jenny cooks a hearty Lasagne, Green Salad with Balsamic Syrup, Herby Cod Bake and a light Spiced Apple Cake with Mango Custard.

Says Jenny: "I've always believed if you eat well, you feel well. This philosophy is at the heart of my new television series and book.

"Jenny Bristow Light is all about getting the best from our food. The recipes are designed to help us choose and cook foods that will make us feel great.

"Throughout the series we use an abundance of fruit, vegetables, fish, cereals, pulses, grains and herbs to ensure we get the nourishment we need."

Low Fat

In this new series Jenny shows us how, with a few adjustments to our cooking methods and eating habits we can lose weight, become healthier, more energetic and stay that way.

Just add in a little exercise and life becomes much more enjoyable.

So with the thought that low-fat doesn't mean no fat, Jenny cooks a hearty lasagne, green salad with balsamic syrup, healthy herb cod bake, sardine and pesto pizza and a delicious light spiced apple cake with mango custard.

Diabetics

Jenny joins the visitors at the famous Ould Lammas Fair and shows those who have diabetes that as long as you have a balanced diet it is perfectly acceptable to use a little bit of candy floss and of course 'Yellowman'.

There’s also low-sugar fruit and fibre oatmeal muffins, cheesy chicken pasta shells, tropical toasted bagels, hot spiced beans on toast, garnished with tomatoes, herbs and a drizzle of yoghurt.

Delicious bittersweet orange mousse with a crunchy praline of 'Yellowman' - perfect for the whole family to enjoy!

Weight Watchers

Jenny invites friends who have been weight watching successfully to have a celebration meal, heavy on flavour but light on calories.

Yellow pepper soup, middle eastern saffron chicken, spiced mash, orange minted salad, summer berry pudding and crunchy ginger meringue with cardamom scented fruits.

Veggie Barbecue

Jenny tests out her very special Veggie BBQ on some of the students from Ballymena Academy.

An unusual BBQ paella surprising easy to cook, vegetarian lemongrass kebabs, spicy vegetarian burgers with huge dollops of mid-western mop sauce and all rounded off with mixed berry crisp with macadamia nuts and vanilla ice cream.

Grub On A Grant

Jenny invites a group of students to experience her nutritional, economical healthy one-pot dishes; ratatouille frittata served warm with a green salad, a gorgeous one pot lemon and garlic chicken garnished with coriander, hot spiced crusty bread and beans, sprinkled with cheese just before serving, penne pasta with roasted tomato sauce and to end it all ... a surprisingly easy meringue dessert.

Convenience Food

Jenny heads off to the Portrush Raft Race to meet and greet people and concentrate on good healthy dishes, making use of lots of convenience foods that can be bought at the local supermarket.

Recipes that are quick to prepare and quick to cook; a summertime lemon and thyme chicken, beef with bamboo noodles; bacon wrapped monkfish with herb lentils and watercress and to finish it off cherry ripe tart garnished with mint.

Chest, Heart and Stroke

Jenny is joined by The Northern Ireland Chest Heart and Stroke Association support group who sample her delicious recipes: cream of roast garlic and potato soup, warm roasted beetroot salad with goat's cheese, garnished with tomatoes, lettuce and a good grinding of black pepper, delicious cucumber, coriander, tomato and red onion salad ending with "sweetness and light" - apple, lemon and vanilla cake.

Low Salt

Jenny shows us how to cook with herbs by producing a real family favourite Italian lamb stew with lentils, potato bravos, a tasty snack for kids and grown-up kids, port fillet with tamarind chilli sauce and a passion fruit mousse with a tangy lime syrup.

Five A Day

Jenny shows us a few ways to include those vital portions of fruit and vegetables within a day's menu.

Delicious fruit-filled smoothies, spiced roasted fruits with yoghurt, pear and parma ham open sandwich, scorched flatbreads with olive, tomato and herb salad, thai noodle sticks with pak choi and green vegetables, early spring vegetable risotto, served with sausages, toasted muffins with caramelised bananas and coconut.

Dairy Free

Jenny produces a delicious meal to suit those of her friends who have a dairy intolerance: Creamy coconut soup with oriental spices, jewelled duck breast stew with roast garlic and potato puree, gingered crème brulee plus warm fruit salad with a caramel and coconut sauce.

Celiac

What could be nicer than sun-dried tomato and pine nut scones or blueberry and white chocolate scones, nutty lemon and ginger cake served on its own with a dollop of fromage frais, gluten-free wraps with chargrilled chicken and peppers - a healthy snack and a truly sumptuous dessert - winterberry gluten-free cheesecake garnished with mint for everyone including celiac's to enjoy.

Mood Food

Jenny joins hordes of visitors who flock to the annual Hillsborough Oyster Festival to cook Mediterranean pasta salad with coriander pesto served with or without oysters, crab and corn chowder served garnished with fresh herbs, and marbled chocolate torte with white chocolate marshmallow sauce, finished off with sparkling red berries with sorbet, garnished with mint.
